There are 4 cafés in Madrid on my Breakfast Always Wins map, spread across Centro, Salamanca and Chamberí. They're mostly places I'd pick for breakfast and for coffee with a snack, though a few also show up for tapas, lunch or dinner.
Among the ones I've saved are ACID Café, Cafetería Bar "Sylkar", L’Entrecote Café de París and Federal Café, for example. They're part of a personal list I keep adding to as I eat out, with no sponsorship involved.
